Sun-Dried Tomato Hummus Recipe
Dress up Basic Hummus with a kick of intense tomato flavour. Serve with your favourite Kashi* Gourmet Snack Crackers Original 7 Grain.
Makes 18 servings (2 tablespoons each)

1/2 cup organic sun-dried tomato halves
1 can (15 oz.) chickpeas, rinsed and drained
2 cloves organic garlic, peeled
1/4 cup sesame tahini (unsalted)
3 tablespoons extra-virgin olive oil
3 tablespoons organic lemon juice
1 tablespoon chopped fresh Italian parsley
1. Soak sun-dried organic tomato halves in enough boiling water to cover for 30 minutes. Drain, reserving liquid.
2. In food processor bowl combine chickpeas and garlic. Cover and process until garlic is finely chopped. Scrape down sides of bowl. Add tahini, 1/4 cup of the reserved tomato liquid, oil, and lemon juice. Cover and process until mixture is nearly smooth.
3. Add tomato pieces. Cover and process until tomato pieces are chopped.
4. Spread in serving dish. Sprinkle with parsley.
