Crowd-pleasing and sumptuous, these bars meld Kashi* Honey Puffed Grains Cereal with naturally sweet honey, fruit, and spices to make a moist, flaky, chunky bar.
Makes 12 bars
16 ounces fresh or frozen organic blackberries
½ cup organic apple juice as needed
2½ tablespoons arrowroot powder
1 tablespoon organic lemon juice (about 1 lemon)
2 cups whole wheat flour
1 cup Kashi* Honey Puffed Grains Cereal
1 cup organic quick rolled oats
¾ cup honey
1¼ teaspoon baking powder (aluminum-free)
¼ teaspoon salt
½ teaspoon ground allspice
1 teaspoon cinnamon
¾ cup organic butter, melted
non-stick cooking spray
1. Preheat oven to 375 degrees. Thaw berries if frozen. Warm berries in saucepan over medium low heat until juices run. Reserve one cup of juice, adding water or apple juice, if necessary, to make one cup. Remove berries from pan and set aside.
2. Combine cooled reserved juice with arrowroot powder and lemon juice in pan. Cook over medium heat and stir until thickened (about 3-5 minutes). Gently stir in blackberries. Set mixture aside.
3. In a large bowl, combine flour, Kashi* Honey Puffed Grains Cereal, oats, baking powder, salt and spices. In a small bowl, blend together honey and melted butter. Stir into flour mixture, making sure all dry ingredients are wet. Press 2/3 of mixture into 13x9x2” baking pan coated with non-stick cooking spray. Bake 12-15 minutes or until lightly browned. Cool slightly, then spread blackberries over the crust. Drop remaining flour mixture over berry layer in small clumps. Bake 15 minutes more, until lightly browned. Cool slightly in pan. Cut into 12 squares. Serve warm for breakfast with yogurt or for dessert with a dollop of whipped cream or frozen yogurt.
