Garlic Braised Greens Recipe
YIELD: 6 servings
1 cup quinoa
2 2/3 cups all natural vegetable stock, divided
1 teaspoon olive oil
5 cloves organic garlic, peeled and minced
2 whole organic carrots, cut into match sticks
6 cups fresh organic kale, removed from stem and chopped finely
2/3 cup all-natural vegetable stock
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/8 cup fresh basil, minced
1. Cook quinoa in 2 cups of the boiling broth until broth has been absorbed, about 15 minutes. Remove from heat and let sit covered for 15 minutes.
2. Heat olive oil in a large skillet over medium high heat. Add garlic and stir for 5 seconds. Add carrots and kale and stir quickly and thoroughly until both are evenly coated with the oil.
3. Reduce heat to low. Add remaining stock, salt, pepper, and mix well. Cover and simmer until carrots and kale are tender but still retaining their bright colors (about 5 minutes). Remove from heat, stir in basil.
4. Toss braised greens mixture with hot cooked quinoa and serve immediately.
Tip: This recipe works well with other grains too! Just substitute the quinoa with an equal amount of barley, bulgur, wheat berries, brown rice or your favourite grain.
